先将水、速酵或鲜酵(10-15g)和糖拌匀

加入粉料和油,用筷子搅拌,水分吸收后,用手揉成光滑的面团

放在钢盆静置10分钟让面团松弛

此时电锅空锅下倒入半杯水,按下开关加热,跳起后无需拔插头,处在保温状态

用杆面机将面团压平,杆成长型,三折后再继续,次数越多越扎实,我杆了五次

最后以长边卷成长条,均分成五份

将切段的面团放在烘焙纸上,放入保温中的电锅(请先将锅盖的水擦乾,开关还不用按下喔!),发酵至2倍大,表面不黏手有弹性

在外锅放入一杯水,按下加热开关,锅盖与电锅间夹一根筷子保持空隙
