山药去皮蒸熟压成泥

取一深盆, 放入山药泥,盐, 糯米粉, 清水慢慢加揉成团...(糯米粉100g 水100cc)

取糯米团的1/10揉成圆饼状做粿粹

煮一锅水,水滚后放入粿粹, 煮至浮起再续煮1分钟后捞起。

放回深盆中, 与原糯米团揉匀, 太黏加些糯米粉进来, 直到不黏才开始加水...

先加粉再加水, 避免太湿糯米粉的量加太多(糯米粉100g 水60cc)

将揉好的糯米团分成等量大小(大约即可)

搓圆后再轻压上下成圆饼状 (搓圆前若表面有些风干, 可用手指沾些水在手心再搓圆)
