先将一杯半的米洗好后泡水(让米先吸饱水分,会比较好熬成粥)

将蒜头去皮后切成蒜末

将干香菇先用清水洗过后泡软(记得要将香菇水留下),泡软后将蒂头去掉(口感会比较好),切成丝。

腊肉切小段

油热后将蒜末加入爆香(转中大火,切记不要烧焦以免影响整锅粥的味道及卖相)

依序将香菇、腊肉及萝卜加入拌炒,此时先加半杯或一杯的水将萝卜闷透

接着将米倒入继续拌炒,炒至半透明

将香菇水倒入后再加水至7分满,水滚后关中小火熬煮,起锅前再加入盐巴及白胡椒调味即可。
