红豆作法:将红豆洗净加水放进电锅,外锅放2杯水蒸。电锅跳起后稍微翻一下红豆,外锅再放1杯水蒸一次。最后加入砂糖拌匀,外锅再放1杯水蒸,一共蒸3次。冷却后送进冰箱冷藏一晚,隔天拿干净的锅子炒至水分略乾,即完成内馅蜜红豆 先取酵母加入温水静置5分钟(酵母溶于水并产生小泡),所有材料搅拌均匀成团

步骤2揉成光滑面团后,加入室温奶油继续揉匀,一开始面团会不太成团,不用担心继续揉吧!

使用两层塑胶袋包覆,收口绑紧,让塑胶袋紧包面团,放进冰箱18-20小时低温发酵

将收口解开,用手掌力量隔着塑胶袋按压面团,排出空气

这边做两款,每份面团约75-85克,切成两份分卷起可以做成山峰状小吐司

喷水、盖上湿布,放置室温发酵1小时候,约成长至两倍大,放进预热后烤箱,已170度烤20-25分钟就可以出炉了!!
