将干面轮与面轮卤汁先卤制至软透,剪小块备用~

面线切小段,放入滚水中煮熟,捞起冲冷水去除多余盐份,也能增加面体弹性,沥干备用,

将香菇泡发后切细丝,木耳~胡萝卜~金针菇切细丝,香菜切末,油葱头切小末片,

取一炒锅,放入2大匙油,放入油葱头末,爆炒至金黄先捞起油葱搁一旁,原锅加香菇爆炒一下,再加入等量的水,加入面线 木耳 胡萝卜 金针菇 酸笋一起煮沸,

大滚后加入调味料调味,(因为面线每家咸度不同,所以盐量,自己斟酌)

滚个十分钟后,加入太白粉水勾芡,就可熄火,再加入香油与乌醋增香,

盛碗后,加入面轮,洒上香菜与油葱酥,和一点素沙茶酱,就完成这道素面羹囉~^^
