海虾剪去头部

从虾头下面的触须中间,用剪刀剪开(别剪太深,会刺穿沙囊)

之后用手分开虾头会看见黑色的袋袋,这就是沙囊

先用剪刀由囊顶剪一下,之后用手轻轻拔走沙囊

再用水清洗虾头后留用

用剪刀把虾脚剪走留用

虾身中间要开一刀,有两种方法:方法一:用小刀从背部顶端开始由头至尾划开一刀,再挑去虾肠

方法二:用剪刀由顶端开始由头至尾剪开,再挑去虾肠老娘喜欢用小刀,因为比较齐口和用刀切开感觉很爽!但会比较容易弄伤!家中没有小刀或怕弄伤的朋友可用方法二

虾身处理好后,放上厨房纸,

卷好后放入雪柜备用

烧热锅子,下点油,把虾头和虾脚下锅,先不要动,待变色后再翻炒上色之后加一大汤碗水,煮沸后转中火煮20分钟成虾汤,隔去壳后备用

粉丝浸软备用(推荐用这种泰国粉丝,会比一般弹牙爽口)

蒜头拍烂后去皮去根部,再切碎备用

干葱去皮切片备用

烧热锅子,下油(多一点也不怕),下虾身,大火将虾煎至8成熟,夹起备用

原锅下干葱蒜头爆香(原锅留有煎虾身时的香味,会更好吃!)

下泰国辣椒酱炒匀,先倒入三分二虾汤拌匀

下粉丝炒匀后,逐匙加入鱼露,两大匙后先试味,不够味再逐少加量

把粉丝煮软后(期间如太干可逐少加入虾汤),把虾身放上面之后加盖,中小火煮3分钟,关火焗2分钟即可(喜欢的可洒上芫茜碎再焗)
