中种面团速发酵母先跟温水搅拌均匀,静置2分钟,之后加入其余材料,开启行程搅拌3分钟(不必光滑,成团就好)静置90分钟(中间翻面一次)

主面团除了奶油之外的材料搅打至程序完成(全程约15分)(中种面团要剥成数块)

之后加入奶油乳酪重新开启程序至可以撑出薄膜(约15分钟)

终温不可超过28度,二发20分钟

将面团中的空气用手掌轻压出来.面团平均分割成6等份,滚成圆形,盖上拧干的溼布休息15分钟

擀成椭圆形,由长向卷起成长条

将卷好的面团收口朝下,间隔适当排入吐司烤模中,用手将面团轻压成高度一致

面团表面喷些水,放在密闭空间中再发酵50-120分钟,放一杯热水,水冷了要更换(今天室温30度C我用了110分钟)面团约发酵到烤盒约7分满取出,烤箱预热220度进炉改160/210烤 35-40分

出炉后马上在桌上重重敲二下排出湿空气,从烤模中倒出来,放在铁网架上放凉
