用水或高汤分别烫熟高丽菜丝,红萝卜丝及鸿喜菇或香菇、杏鲍菇(如用高汤烫、汤中会有蔬菜的甜)

蛋打散,加入调好的太白粉水拌匀(太白粉:水=1:2)热锅加油,油热后倒入蛋液,稍转锅子让蛋液均匀扩散成圆,煎成金黄色盛起备用

待蛋皮稍凉,拿ㄧ碗放入蛋皮,底部中心放入切花的红萝卜片,四周放红萝卜丝、高丽菜丝、鸿喜菇、火腿丝等,围成ㄧ圈(可依颜色或喜好摆放)将多余的蛋皮包起,整碗放入电锅蒸约10分钟

蒸好的蛋包倒扣至大汤碗中,于蛋包上轻划三刀成六片花瓣。*轻切将蛋皮划开即可,切太深会让内馅乱掉*如蛋包较大可划四刀成八片花瓣
