烧一锅水加上少许盐和油(保持菜的翠绿)来川烫青江菜。

川烫好摆盘备用

备齐所有辛香料和酱汁

除了香菜外,将所有辛香料和酱汁拌匀。

吴郭鱼正反面的背各切三刀擦干水份

起油锅(油可多一点)将鱼下锅煎,盖上锅盖以防喷油,

每面煎约五分钟,让鱼煎到乾乾赤赤的酥香酥香的 (用不沾锅较易成功喔)

鱼煎好后将余油倒出,再倒入所有的调味料煮一下至糖化了就好(约二三十秒即可)不可加热太久,醋酸味会挥发掉

将酱汁倒在鱼上再洒上香菜末即可
